Artichokes are actually a type of thistle that possesses a delicious heart and leaves! For centuries, artichokes were used for medicinal purposes, as they were helpful with everything from digestive problems to improving liver functions.
Most people prefer the heart of the artichoke, but the leaves are just as nutritious and tasty. Artichokes are great for lowering LDL (“bad”) cholesterol, and raising HDL (“good”) cholesterol. They’re also very high in fibre, potassium, and vitamin C (among many other vitamins). Dietary fibre is important for maintaining and improving the health and function of the digestive system, while potassium helps to decrease our chances of strokes or heart attacks.
Artichokes are easy to cook with, making them incredibly versatile. If you’re not comfortable with using a whole artichoke, select canned artichoke hearts without added salt or preservatives! They are easy to add to salads and pastas.
