Besides being delicious, carrots have a ton of benefits that get overlooked. Our parents often told us to eat our carrots because they would help us see better. While this might have been mostly a myth, there is a grain of truth to it! Carrots are high in lutein and zeaxanthin, which support eye health.
Carrots also contain high amounts of alpha and beta carotene, which, when combined with vitamin C, form a powerful antioxidant. Carrots are also high in carotenoids, so although they are a vegetable that is higher in sugar, they’re full of good stuff!
Carrots are great to take as a snack! They’re perfect for on the go; you can pair them with other veggies like tomatoes and dip them in hummus (like we do) or just wash them, slice them, and eat them as is! Keep your eyes peeled for fresh carrots during the summer and fall months - there should be tons at your local farmers’ market!
